Classes in our kitchen are designed to provide an atmosphere of learning and enjoyment. From our classes you’ll learn the skills, techniques, and tips for recreating recipes successfully at home. We offer a broad variety of classes including ethnic flavors, culinary training such as knife skills, creative applications with cookie and cake decorating, and advancing the use of tools and appliances in the kitchen.

We do not offer refunds on classes. If cancellation occurs prior to 48 hours before the class, we will issue store credit.
2025 CLASSES
Join Chef Christopher Roth as he collaborates with Adam Martinez, owner and winemaker of Rapid City's much-anticipated Uplifted Winery, for an exclusive evening celebrating fall flavors. Together, they will present a thoughtfully crafted four-course tasting menu, each dish expertly paired with one of Uplifted Winery's handcrafted wines.
Riesling paired with herbed goat cheese crostini
Chardonnay paired with sea scallop with wild mushroom in apple cream sauce
Sezão paired with lamb meatballs and cherry-plum mostarda
Cabernet Sauvignon paired with dark chocolate-gouda bon bon

Session II of Classic Mother Sauces (and two Daughter sauces) - Mother sauces are the building blocks of classic French cuisine and sauces used to make other sauces. Daughter sauces start with a Mother sauce and incorporate additional ingredients. Each sauce will be used for a menu item and suggestions for other dishes with be given.
· Espagnole – (served with egg noodles and mushrooms) a rich brown sauce made from a browned roux enhanced with mirepoix (diced celery, carrot, and onion), pureed tomato, bone broth, and bouquet garni (tied bundle of fresh herbs, traditionally parsley, thyme, and bay leaf)
· Demi-glace (Daughter) – (served with steak and bleu cheese) this Daughter of Espagnole features slowly reduced bone stock and red wine
· Sauc Tomat – French tomato sauce (served with crostini for dipping) seasoned with carrots, onions, pork fat and stock, and herbs.
· Bolognese (Daughter) – (prepared with Italian sausage and served with cheese ravioli) this Daughter of Sauc Tomat features mirepoix (diced celery, carrot, and onion), and minced beef or pork.

Holiday Biscotti with pistachios, dried cranberries, and white chocolate; Sweet and Spicy Candied Mixed Nut Brittle; Panettone – rich Italian bread with sliced almonds and candied citrus baked in a cylinder, served with crema al mascarpone (mascarpone flavored with amaretto)

If cancellation occurs prior to 48 hours before the class, we will issue store credit. Due to planning purposes and supply costs, we cannot make exceptions. Class seats are transferrable, so you are always welcome to gift your seat to a friend.
We reserve the ability to cancel a class due to inclement weather or lack of class participants.
In the event of a class cancellation, a full refund will be offered.

Session I of Classic Mother Sauces (and one Daughter sauce) - Mother sauces are the building blocks of classic French cuisine and are the sauces used to make other sauces. Daughter sauces start with a Mother sauce and incorporate additional ingredients. Each sauce will be used for a menu item and suggestions for other dishes with be given.
· Béchamel (with au gratin potatoes) is a rich, creamy, milk-based white sauce starting with a butter and flour roux.
· Hollandaise (with roasted asparagus) and emulsion of egg yolks suspended in melted butter to create a creamy, rich sauce that is finished with pepper and either white wine vinegar or lemon juice.
· Béarnaise (Daughter) – (served with beef tenderloin) this Daughter of Hollandaise is infused with white wine, shallots, and tarragon.
· Velouté – (served with rotisserie chicken) a light, delicate, and velvety sauce made with a roux of butter, flour, and clear stock.
